Why the order on the list matters
Most closing lists are written in the order someone walked through the room. Write it in the order of what goes wrong: heat and gas first, food safety second, water and drains third, then locks and alarm. The last person out is tired — the list should put the expensive mistakes at the top where they get read.

Food back in the walk-in covered and dated, surfaces sanitised and left to sit the right time, fryers and gas off, drains cleared, trash out, back door locked, alarm set. The order matters: the things that can start a fire or make someone sick before the things that just look tidy.
